I know I've written about fattoush, but it really is the cure for the 'I know I should eat a salad, but I really want to eat potato chips for dinner' problem.
1 sheet of lavash or very thin pita
2 roma tomatoes, chopped
1/2 large cucumber cut into slices then quartered
4 large radishes, sliced
2 small carrots, shredded
